I have been learning Explain Everything as a screen-casting tool for iPad to put up short tutorials online for my students.  I am still in the learning phase but there is also a free ibook available that you can download that explains the App which can be lacking in other Apps.  I have also used iMovie to quickly take pictures of the students working in groups and make short movies that they can enjoy of themselves.
